Classic Home-made Tomato Sauce

Method

    Heat olive oil in a medium saucepan over medium heat.

    Add chopped onion and a pinch of salt; cook until softened and translucent, about 5–7 minutes.

    Add minced garlic and cook 30–60 seconds until fragrant, stirring so it doesn't burn.

    Stir in tomato paste if using and cook 1 minute, then add crushed canned tomatoes and water or broth.

    Add dried oregano, black pepper, red pepper flakes and sugar if using. Bring to a gentle simmer.

    Reduce heat to low and simmer uncovered, stirring occasionally, for 30–35 minutes until sauce thickens; taste and adjust salt, pepper, and sweetness.

    Stir in torn fresh basil at the end. For a smoother sauce, blend with an immersion blender or in batches in a blender.

    Serve or cool and store in the refrigerator for up to 5 days or freeze for up to 3 months.
