Equipment
Method
- 01
Preheat oven to 425°F (220°C). Line a baking sheet with parchment or lightly oil it.
- 02
Pat chicken breasts dry and, if thick, slice horizontally to make even thickness (~1/2–3/4 inch) or pound lightly.
- 03
In a bowl combine grated parmesan, breadcrumbs, lemon zest, black pepper, salt, and dried oregano.
- 04
Brush each chicken breast with melted butter and a little oil, then press both sides into the parmesan-breadcrumb mixture to coat; place on prepared sheet.
- 05
Toss mushrooms with minced garlic, 1 tbsp oil, a pinch of salt and pepper; spread around chicken on the sheet.
- 06
Bake 20–25 minutes until chicken reaches 165°F (74°C) and crust is golden and mushrooms are tender. If desired, broil 1–2 minutes to crisp the topping—watch closely.
- 07
Remove from oven, squeeze lemon juice over chicken and mushrooms, sprinkle chopped parsley, and serve with lemon wedges.
