Toast sourdough slices until golden and crisp (about 2–4 minutes depending on toaster or skillet).

While bread toasts, halve and pit the avocado. Scoop flesh into a bowl and mash with lemon juice, a pinch of salt, and 1/2 tbsp olive oil until slightly chunky.

Taste and adjust seasoning with more salt, pepper, or lemon as desired. Stir in chopped herbs if using.

Spread smashed avocado evenly over toasted sourdough. Drizzle remaining 1/2 tbsp olive oil over the top.

Add optional toppings: halved cherry tomatoes, crumbled feta, soft-boiled egg halves, and a sprinkle of red pepper flakes or extra black pepper.
