Preheat oven to 425°F (220°C). Pat chicken thighs dry with paper towels.

In a small bowl combine minced garlic, lemon zest, lemon juice, olive oil, 1 tsp salt, 1/2 tsp pepper, and dried oregano.

Season both sides of the chicken thighs with remaining 1/2 tsp salt and 1/2 tsp pepper. Place thighs skin-side up in a cast iron skillet, spacing evenly.

Spoon the garlic-lemon mixture over and around the thighs, letting some run under the skin if possible.

Roast in the preheated oven for 30–35 minutes, until skin is golden and an instant-read thermometer at the thickest part reads 165°F (74°C). If you want extra-crispy skin, broil 1–2 minutes while watching closely.

Remove from oven and let rest 5 minutes. Sprinkle chopped parsley and serve with lemon wedges.
